One die is flat, several make a curve
A single die is uniform, every face equally likely. Roll several and add them, and the totals pile up in the middle, the start of the bell curve. A 1d12 lands on every total with the same 8.3 percent chance, while 2d6 reaches 7 six ways out of 36 and 3d4 stacks the middle harder still. Choose one die when you want flat drama, and several smaller dice when you want reliable middles, the same trade tabletop designers make.
Odd dice and where they come from
Games and referees invent dice that plastic rarely provides: a d3 for minor damage, a d7 for a day of the week, a d30 for house rule tables, a d66 read from gaming zines, and a d1000 for one in a thousand events. This roller makes them all real with the same fair, cryptographic randomness as the standard set. For expressions that mix dice, use the dice notation roller.
